Serves 8-10
INGREDIENTS
200g self-raising flour
225g caster sugar
¾ teaspoon salt

2 tablespoons cocoa
110g margarine
2 eggs beaten with 5 tablespoons of evaporated milk
5 tablespoons water
1 teaspoon vanilla essence
For the icing:
60g margarine
4 tablespoons cocoa (or 2 cocoa and 2 drinking chocolate powder if you prefer)
225g sieved icing sugar
3 tablespoons hot milk
1 teaspoon vanilla essence
METHOD
Sift together the flour, sugar, salt and cocoa. Rub in the margarine. Stir in the beaten eggs, vanilla essence and water. Beat all the ingredients well to mix them.
Grease and flour 2 x 20cm cake tins (not loose-bottomed). Divide the mixture between the tins. Bake in a moderate oven (160–175°C or gas mark 3–4) for 35 minutes. When cold, sandwich together and cover with icing as below.
For the icing melt the margarine in a bowl (in microwave for speed). Blend in the cocoa and then stir in the icing sugar, milk and essence. Beat until smooth and thick.
Cover and sandwich cake – enjoy!
